There is something about Fall that makes me want to bake. I’ve never really been much of a baker but since becoming a mom, I find I want more control over ingredients my kiddos consume. Also, I love the way my house smells when something delicious is baking in my oven. It just makes things even more cozy. Currently we are in the season of all things pumpkin. Trips to the local pumpkin patch, PSLs on repeat, and homemade baked goodies.
I have a handful of cook books in my home that I love as they share realistic, good old home cooking. I’m also and avid Pinterest recipe looker-upper. I start most of my searches with words like quick and easy. It’s hard to find the time to make anything too elaborate, but something tasty and maybe even a wee bit healthy, I make time for it. A few weeks ago I made this delicious pumpkin loaf. Made with pumpkin, coconut oil, and spelt flour and sweetened with honey, it was a hit with my family. Paired with an apple picked from our tree or a pear from the local market, it makes a satisfying breakfast or snack at coffee time.

I also sprinkled unsweetened coconut on top for a little extra texture. To make sure it was good and moist, I added in a bit of extra pumpkin too.
