
I don’t think I’ve ever actually shared a recipe on the site before. I’ve been trying to bake more lately. We even bought a fancy new Kitchen Aid mixer. I have been making cookies, granola bars, a first time fail attempt at bread, and muffins. I have been playing with recipes and working on finding healthier alternative ingredients. I’m all about cutting back on sugar {my addiction}, and making easy snacks with wholesome ingredients that my whole family can eat. I had a Snapchat request for this recipe, so I thought I would share it with you all.
1 1/2 cups spelt flour
1 cup of quick oats
1/3 cup flaxmeal
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg beaten
1/2 cup milk
1/3 cup coconut oil
1/2 cup brown rice syrup
2/3 cup mashed banana {* I eyeballed this, and definitely didn’t use enough banana. They were a bit dry, so more banana next time.}
1/3 cup of dark chocolate chips
Preheat oven to 400F
Stir oatmeal, flour, baking powder, baking soda, & salt
Mix egg, milk, rice syrup, & mashed banana together well
Add this mixture to the dry ingredients
Gently stir until moistened
Fill greased muffin tins (I like to use coconut oil)
Bake for 13-18 minutes, or until golden brown.
Makes 12 large muffins
When I eat them, I warm them up a bit, split them in half and drizzle a bit of honey on them. So delish!
